Instructions
In a medium bowl or jar, combine the rolled oats, almond milk, chia seeds, maple syrup, cinnamon, vanilla extract, and salt.
Stir in the diced peach until well combined.
Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight (or for at least 4 hours) to allow the oats to soak up the liquid.
In the morning, give the oats a good stir and check the consistency; if it's too thick, add a splash of almond milk to loosen it up.
Serve the overnight oats in bowls. Top with extra slices of peach and your choice of granola, chopped nuts, or shredded coconut for added texture.
