Instructions
In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, and red onion.
Add the Kalamata olives and crumbled feta cheese to the bowl.
In a small jar, mix the olive oil, red wine vinegar (if using), dried oregano, salt, and pepper. Shake well to combine.
Drizzle the dressing over the salad and gently toss everything together to coat the ingredients evenly.
Sprinkle the fresh parsley on top before serving for an added burst of flavor.
Notes
Add more olives or feta cheese according to your taste.
