Pour the melted dark chocolate into the prepared baking dish and spread it evenly with a spatula. Refrigerate for about 10-15 minutes until set.
Once the dark chocolate layer is firm, melt the sugar-free white chocolate chips in the microwave using the same method (30-second intervals until smooth).
Stir in the peppermint extract into the melted white chocolate.
Pour the white chocolate mixture over the set dark chocolate layer, spreading it evenly.
Immediately sprinkle the crushed sugar-free peppermint candies over the white chocolate layer, pressing them in gently.
Finish with a light sprinkle of sea salt to enhance the flavor.
Refrigerate the entire creation for another 30-60 minutes or until fully set.
Once set, lift the bark out of the baking dish using the parchment paper, and cut it into squares or break it into pieces.
