In a bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a towel, and let rise for 1 hour or until doubled in size.
Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
In a large pot, bring 10 cups of water and the baking soda to a boil.
Punch down the dough and divide into 24 equal pieces. Roll each piece into a small ball.
Drop each ball into the boiling baking soda water for about 30 seconds, then remove with a slotted spoon and place on the parchment-lined baking sheet.
Brush each pretzel bite with the beaten egg and sprinkle with flaky sea salt and, if desired, crushed red pepper flakes.
Bake for 12-15 minutes or until golden brown.
Allow them to cool slightly before drizzling with hot honey.
