Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine honey, olive oil, minced garlic, ground cumin, paprika, salt, and pepper. Mix until well incorporated.
Add the carrots to the bowl and toss thoroughly, ensuring they are well-coated with the honey garlic mixture.
Spread the coated carrots evenly on a baking sheet lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the carrots are tender and caramelized.
Once done, remove from the oven and let cool slightly.
Transfer the roasted carrots to a serving dish and garnish with freshly chopped parsley.
Notes
Serve on a wooden platter, drizzled with extra honey and sprinkled with sesame seeds for added texture and flavor.
