Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
Pour in the crushed tomatoes and vegetable broth, then add the dried oregano, dried basil, salt, and pepper. Stir well to combine.
Bring the soup to a simmer and let it cook for about 10 minutes to allow the flavors to meld.
Add the tortellini to the simmering soup and cook according to package instructions, usually about 3-5 minutes for fresh or 7-10 minutes for frozen.
When the tortellini is cooked, stir in the baby spinach and cook for another 2 minutes until wilted.
Remove the pot from heat and stir in the fresh basil before serving.
Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.
Notes
Feel free to add more vegetables or protein as desired.
