Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until it starts to brown. Drain excess fat.
Add the chopped onion and minced garlic to the skillet with the beef, cooking until the onion is translucent (about 5 minutes).
Stir in the black beans, diced tomatoes (with juice), corn, chili powder, cumin, salt, and pepper. Cook for an additional 5 minutes to blend the flavors.
In a large bowl, combine the cooked pasta, the beef mixture, and 1/2 cup of the shredded cheddar cheese. Mix well.
Spread the mixture evenly in a greased 9x13 inch baking dish.
In a small bowl, mix the sour cream with the remaining 1/2 cup of shredded cheddar cheese. Spread this mixture over the pasta-beef layer.
Top with crushed tortilla chips for added crunch.
Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the cheese is bubbly.
Once out of the oven, allow it to cool for a few minutes before serving. Garnish with chopped cilantro or green onions if desired.
