In a large mixing bowl, combine the ground chicken, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well until all ingredients are evenly distributed.
Take small portions of the chicken mixture and form them into patties, about 1/2 inch thick.
In a shallow dish, mix the breadcrumbs with grated Parmesan cheese. Coat each chicken patty in the breadcrumb mixture, pressing gently to ensure it adheres.
Heat a bit of olive oil in a large skillet over medium heat. Once hot, add the coated chicken patties in batches. Cook for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove and drain on a paper towel.
In a baking dish, spread a thin layer of marinara sauce. Layer the chicken patties on top, then spoon more marinara sauce over each patty. Finally, top with shredded mozzarella cheese and extra Parmesan if desired.
Preheat your oven to 375°F (190°C). Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
Once out of the oven, sprinkle fresh chopped basil on top for a burst of flavor.
Notes
Serve hot, garnished with fresh basil. Pair with a side of pasta or a green salad for a complete meal.
