Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the melted butter, minced garlic, Italian herbs, salt, and pepper.
Add the halved baby potatoes to the bowl and toss until they are well coated with the garlic butter mixture.
Spread the coated potatoes onto a baking sheet in a single layer.
In the same bowl, add the chicken breasts and sprinkle 1/2 cup of the grated Parmesan cheese over them, ensuring they are fully coated.
Place the chicken breasts on the baking sheet alongside the potatoes.
Sprinkle the remaining Parmesan cheese over the chicken and potatoes before placing the baking sheet in the oven.
Bake for 25-30 minutes, or until the chicken has reached an internal temperature of 165°F (75°C) and the potatoes are tender and golden.
Remove from the oven and let it cool for a few minutes before garnishing with fresh parsley.
Serve hot, enjoying the crispy, cheesy crust of the chicken alongside the buttery garlic potatoes.
