Instructions
Preheat your oven to 400°F (200°C).
In a baking dish, combine the halved cherry tomatoes and crumbled feta cheese.
Drizzle the olive oil over the tomatoes and feta, then sprinkle with dried oregano, red pepper flakes (if using), salt, and pepper.
Bake in the preheated oven for 15-20 minutes, until the feta is golden and the tomatoes are blistering.
Remove the baking dish from the oven and make four small wells in the mixture. Carefully crack an egg into each well.
Return the dish to the oven and bake for an additional 10-15 minutes, or until the eggs are set to your liking.
Once cooked, remove from the oven and let cool slightly.
Garnish with fresh chopped parsley and serve with slices of crusty bread to enjoy the flavorful sauce.
