Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent.
Stir in the minced garlic and sauté for an additional minute until fragrant.
Add the sliced carrots and chopped celery to the pot, cooking for about 5 minutes until they begin to soften.
Pour in the chicken broth and bring the mixture to a gentle boil.
Stir in the shredded chicken, dried thyme, dried rosemary, bay leaf, and season generously with salt and pepper.
Reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.
Add the egg noodles to the pot and let them cook for about 8-10 minutes, or until tender.
Once the noodles are cooked, remove the bay leaf and adjust seasoning if necessary.
Serve the soup hot, garnished with fresh parsley on top for an aromatic finish.
Notes
Feel free to add other vegetables like peas or corn for extra flavor.
