Instructions
In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
Pour in the chicken or vegetable broth, and bring it to a gentle simmer.
Add the sliced mushrooms and carrots to the pot, allowing them to cook for about 5 minutes until tender.
Gently add the gyoza to the pot, cooking for an additional 6-8 minutes, or until the gyoza are heated through and cooked thoroughly.
Toss in the chopped bok choy and green onions, and stir in the soy sauce. Cook for another 2-3 minutes until the bok choy has wilted.
Taste the soup and adjust seasoning with salt and pepper as needed.
To serve, ladle the soup into bowls, garnishing with fresh cilantro if desired.
