Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.
Open the cans of cinnamon rolls and cut each roll into quarters. Place the pieces in the prepared baking dish, spreading them out evenly. If you'd like, sprinkle chopped pecans over the top.
In a medium bowl, whisk together the eggs, milk, heavy cream, vanilla extract, ground cinnamon, nutmeg, and brown sugar until well combined.
Pour the egg mixture evenly over the cinnamon roll pieces in the baking dish, ensuring all pieces are soaked. Press down gently with a spatula to help the pieces absorb the custard.
Optionally, break apart any remaining icing from the cinnamon rolls and drizzle it over the top of the mixture.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Remove from the oven and let it rest for a few minutes before serving.
Serve warm, drizzled with maple syrup over the top for added sweetness.
