Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with non-stick spray.
In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted coconut oil. Mix until well combined.
Add the eggs and vanilla extract to the banana mixture, whisking until smooth.
In a separate bowl, whisk together the baking soda, salt, cinnamon, and flour. Slowly add the dry ingredients to the wet ingredients, mixing just until combined. Avoid overmixing.
Fold in the chocolate chips and nuts (if using) until evenly distributed throughout the batter.
Divide the batter evenly among the prepared muffin tins, filling each cup about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few crumbs attached.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
