Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through. Season with paprika, salt, and pepper, then remove from heat.
In a large mixing bowl, combine the sliced potatoes, cooked beef mixture, sour cream, and beef broth. Mix well until the potatoes are evenly coated.
In a greased 9x13 inch baking dish, layer half of the potato mixture. Sprinkle half of the shredded cheddar cheese over it.
Add the remaining potato mixture and top with the rest of the cheddar cheese. If using, sprinkle crushed crispy fried onions on top for extra crunch.
Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes.
After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden and the potatoes are tender.
Allow to cool for a few minutes before serving.
Notes
Serve hot from the oven, garnished with chopped green onions or parsley for a pop of color.
