Instructions
In a large mixing bowl, combine the almond butter and honey (or maple syrup) until smooth.
Stir in the vanilla extract and sea salt. Mix thoroughly.
Gradually add the rolled oats, shredded coconut, chopped almonds, and chocolate chips. Stir until all ingredients are evenly mixed.
Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal.
Pour the mixture into the prepared dish and press it down firmly using a spatula or your hands to create an even layer.
Cover the dish with plastic wrap and refrigerate for at least 1 hour or until firm.
Once set, lift the bars out using the parchment overhang and cut them into squares or rectangles.
Store the energy bars in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
