Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy clean-up.

    Cut the zucchinis into fry-shaped sticks, about 1/4 inch thick. Place them on a towel and sprinkle with salt. Let them sit for about 15 minutes to draw out moisture, then pat them dry with paper towels.

      Set up a breading station:

        - In one shallow dish, place the flour.

          - In a second shallow dish, beat the eggs until well combined.

            - In a third shallow dish, mix the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.

              Dredge each zucchini stick in flour first, ensuring it's coated evenly. Tap off any excess flour.

                Next, dip the floured zucchini into the beaten eggs, allowing the excess to drip off.

                  Finally, coat the zucchini sticks in the breadcrumb and Parmesan mixture, pressing lightly to adhere the coating.

                    Place the breaded zucchini fries onto the prepared baking sheet in a single layer. If desired, lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.

                      Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fries are golden brown and crispy.

                        Once baked, remove from the oven and allow to cool slightly before serving.
